Bacon, Cheddar and Caramelised Red Onion Chutney Cruffins

Hands up who wants to try these festive cruffins which are filled with crispy bacon, cheddar and red onion chutney? If you've never heard of a cruffin before, it's a cross between a croissant and a muffin and is totally delicious! Cruffins are usually made with sweet ingredients, but the combination of the savoury bacon and cheddar is scrumptious with the sweet chutney and croissant dough.

Serves 12 people   Prep 20 minutes   Cook 15-20 minutes


Ingredients

200g Bacon by Nature back bacon

350g of ready-made croissant dough

2 tsp caramelised red onion chutney

100g grated cheddar

Method

Slice 200g bacon into small pieces, pan fry until crispy then set aside.

Preheat your oven to 180C.

Roll out 1 pack (350g) of ready-made croissant dough on a floured board. Ignore the diagonal lines and slice the dough along the horizontal lines into 3 rectangles.

Spread each of the rectangles with 2 tsp caramelised red onion chutney. Sprinkle over 100g grated cheddar followed by the bacon, evenly distributing between each.

Roll up each of the croissant dough rectangles as if you were making a swiss roll, then slice each roll into 4 pieces.

Place the croissant swirls facing upright in a greased 12-hole muffin tin.

Bake for 15-20 minutes or until golden brown. Leave to cool slightly before removing from the tin. The cruffins can be served hot or cold, but are best enjoyed while still crispy and warm from the oven. Enjoy!
