Denhay’s Easter Avacado, Egg and Bacon

Start the Easter weekend with egg shaped, warm, creamy avocados baked with eggs and topped with Denhay Smoked Streaky bacon.

Serves 2 people   Prep 5 minutes   Cook 20 minutes


Medium avocado, cut in half and stone removed

2 small eggs

2 strips Denhay Smoked Streaky Bacon, cut into 1/2 inch pieces (optional)

A handful of parsley

Salt and pepper to taste


Scoop enough out the avocado so that there’s enough room to crack and sit one egg into each side. Now bake in a preheated 180oc oven for 20 minutes, or until the eggs are set the way you like it. As the avacodo and eggs bake, you can fry, grill or oven cook the Denhay bacon rashers. Set aside the bacon when cooked. Finally, season the avocados with salt and pepper to taste, top with the bacon and enjoy with a spoon or place on toast. Delicious.
