This pairing of award-winning Denhay streaky bacon with fresh white fish and served with vine roasted tomatoes makes for a satisfying, quick and tasty summer supper.
Ingredients 4 basa fillets or any other white fish 12 strips of Denhay smoked streaky bacon 4 tbsp sun-dried tomato pesto 2 vines of cherry tomatoes salt and pepper
Preparation time 10 minutes Cooking time 20 minutes Serves 4 people
Preheat the oven to 400°F/200°C. Season the fish with salt and pepper and spread 1tbsp of sun-dried pesto across the top of each fillet. Wrap 2-3 strips of Denhay smoked streaky bacon around each of the fish fillets and season again with black pepper. Arrange the fish on a large baking tray along with 2 vines of cherry tomatoes, ensuring that they don't touch each other. Bake for 14 minutes and then place under the grill for a further 3 minutes until the bacon is crisp and the tomatoes slightly charred.
